- Preheat your oven to 180°C (350°F) and line a baking sheet with parchment paper. Arrange the tart shells on the sheet, ensuring they’re evenly spaced.
- Place the tart shells in the oven and bake for about 5 minutes until they just start to turn golden and crisp up slightly. This helps the shells hold their shape during filling.
- Meanwhile, cut the Brie cheese into small cubes or slices. Set aside for easy layering later.
- In a small saucepan, combine cranberries, sugar, water, and a pinch of salt. Bring to a gentle simmer over medium heat, stirring occasionally, until the cranberries burst and the mixture thickens slightly, about 5 minutes. The sauce should be glossy and bubbling.
- Remove the tart shells from the oven and carefully place a few pieces of Brie into the center of each shell. The shells should be warm and slightly crispy.
- Using a small spoon, dollop a spoonful of the warm cranberry sauce on top of the Brie in each tart shell. The cranberries will add a vibrant color and a tart burst of flavor.
- Return the assembled bites to the oven and bake for an additional 10-12 minutes, until the Brie is melted and bubbly and the tart shells are golden brown around the edges.
- Remove from the oven and let the bites rest for 2 minutes. This allows the cheese to set slightly and makes them easier to serve.
- If desired, garnish with fresh thyme or a sprinkle of flaky sea salt for extra flavor. Serve warm or at room temperature for the best experience.
Notes
For a gluten-free version, use almond flour tart shells. You can also add a drizzle of honey or balsamic vinegar before serving for extra depth.
