Ingredients

  • 1.5 pounds ground beef or a mix of beef and turkey
  • 1 large onion finely chopped, caramelized if desired
  • 1 cup cracker crumbs or crushed cornbread
  • 2 eggs beaten
  • 2 tablespoons Worcestershire sauce
  • 0.5 cup milk or almond milk
  • 0.5 cup tomato glaze smoky and tangy

Equipment

  • Large mixing bowl
  • Baking sheet with parchment paper
  • Meat thermometer
  • Offset spatula
  • Sharp knife

Method

  1. Preheat your oven to 180°C (350°F).
  2. In a large bowl, combine the ground beef, chopped onions, and cracker crumbs, mixing gently with your hands until evenly distributed.
  3. Add beaten eggs, Worcestershire sauce, and milk to the mixture, folding everything together just until combined. The mixture should feel slightly sticky but manageable.
  4. Shape the mixture into a rough, rugged monster-like form on a parchment-lined baking sheet, creating a tall, uneven shape with peaks and valleys for character.
  5. Bake in the preheated oven for about 50-60 minutes, or until the outside is deep golden and a meat thermometer inserted into the center reads 75°C (165°F).
  6. Remove the meatloaf from the oven and let it rest for 10 minutes—this helps keep it juicy and makes slicing easier.
  7. Use an offset spatula to spread a generous layer of smoky tomato glaze over the top of the rested monster, giving it a shiny, caramelized finish.
  8. Slice into portions with a sharp knife, revealing the juicy, well-cooked interior and the crispy crust.
  9. Serve slices of the monster meatloaf hot, paired with your favorite roasted vegetables or a simple green salad, and enjoy the hearty, wild flavors.
