Ingredients
  

  • 2 cups fresh pineapple chunks remove tough core
  • a handful fresh mint leaves tear leaves before blending
  • 2 tablespoons honey or adjust to taste
  • half lime lime juice
  • 1/4 cup water or coconut water

Method
 

  1. Gather all your ingredients and tear the mint leaves to release their oils and aroma.
  2. Place the pineapple chunks, torn mint leaves, honey, lime juice, and water into your blender.
  3. Blend everything until the mixture is smooth, fragrant, and bright yellow with a slightly frothy texture, about 30 seconds.
  4. Taste the mixture and adjust the sweetness by adding more honey if desired, blending briefly to combine.
  5. Pour the vibrant mixture into popsicle molds, leaving about a quarter inch space at the top for expansion.
  6. Insert the popsicle sticks into the molds and place them in the freezer.
  7. Freeze for at least 4 hours or overnight until solid and firm.
  8. To serve, run warm water over the molds for a few seconds to loosen the popsicles.
  9. Gently wiggle and pull out the popsicles, revealing bright, glossy treats with a refreshing aroma.
  10. Enjoy immediately for the best texture and flavor, or wrap in parchment and store in the freezer for up to two weeks.
